With roasting pans size and weight are important. You want something that is small enough to fit in your oven, but big enough to hold your Thanksgiving turkey. You will want it to be metal and have a rack. The thicker and heavier grade the better, you don't want it bending under the weight of a 25-pound turkey. The heavier pans will also stand up to the making reduction sauces on the stovetop. Nothing gives a sauce more flavor than all of that fond stuck to the bottom of a roasting pan.
