Stainless Steel cookware is usually made from a single thin piece of stainless steel. The reason the metal is so thin is stainless is such poor conductor of heat. To combat this there is often a disc of copper or aluminum welded to the bottom of the pan. This does help but the sides of the pan are still stainless steel and will have uneven heat distribution. In addition because the stainless layer is so thin the pan is not very durable.The big advantage of stainless steel pans is price. You can get a set very inexpensively (usually less than $150). While these pans will do in a pinch, they won't hold up for someone who cooks extensively
